We need mastic for modeling, an orange dye, kandurin "Golden Shine", stacks, starch (corn), black dye (if its no, 3: 2: 1 red, blue, green - black is born in this ratio!) We paint 2 pieces of mastic with an orange color, which is smaller in light orange, which is bigger in bright orange. From the light we will do the fins and tail (consists of 3 parts), from the bright body of the fish ... see photo ...

3. Cut fins and tail! that's what happened ... I did it without a stencil - by the eye!

4. With this stack, we apply a pattern ... in the form of strips on the fins and tail ...

5. That's it ...

6. With such a stack with a ball at the end we are excited ... and the tail and fins ...

7. Then we put all this on a cage (from eggs) with foil, attach a bend, and leave to dry ... (by the way, the cage is clean ... begged from the egg saleswoman ... as many as 2 pieces)

8. We make a little body from a bright orange piece ... i.e. This is a drop that we bend and put on the cup ... the fish will dry on it, so take a bigger cup ... so that the tail fits ...

Melt the butter, honey and sugar in a water bath or over low heat. Then we add eggs, citric acid (dilute in a small amount of hot water), soda with lemon juice and sifted flour, brew the mixture ...

20. Cool. We tear off the pieces of dough and roll it out with a notch for 25, make a circle, transfer it to a baking sheet adjusted with flour, chop the cake! I got 9 pcs. (cakes). We bake at a temperature of 200g, until golden brown.
Cream:
Rub eggs with sugar and flour, add lemon juice, dilute with cold milk, put zest. Boil until thick. Cool, strain. Beat cream until soft peaks and mix with lemon custard.

21. Korzh shake off the flour and fluff cream. Collected the cake on the substrate !. Now send it to the fridge for the night. The cake should soak and settle.

Separate the whites from the yolks, whip the whites with the sugars as for the meringue, add the yolks one at a time, at the end at the lowest turns, add the sifted flour. Beat no more than 1 minute. We distribute the dough on the 2nd baking sheets, covered with parchment. Bake 10 minutes at a temperature of 180g. To cool. Cut 1 sheet of biscuit dough into strips, measure the height of the cake ... and cut strips of that width. Grease with a thin layer of whipped cream, sides of the cake and wrap tightly with biscuit. From the 2nd sheet cut a circle with the diameter of the cake ... 24 (the cakes are slightly reduced in size, baked with a diameter of 25!).
Cover the top of the cake .... the biscuit should firmly hold onto the cake. Coat with a thin layer of cream and refrigerate.

22. Now proceed to the wave !!!!

And in the oven at a temperature of 200 grams ... until the caramel boils, remove, cool slightly and bend on the rolling pin of the diameter we need. Let it freeze. We also need to make several (3) small waves along the same lines. Store at room temperature ... not in the refrigerator!

25. Then I bent it on the Tapper rolling pin ... it is wide enough ... and left for the night ... yes ... and the little ones also bent on a small rolling pin ... without removing it from the parchment !!!!

Grind crackers into small crumb, mix with poppy seeds. And pour on the sides of the cake, as in the photo ... it will be the seabed.

27. Covering:
Mastic divided into 2 parts ... big and small ... Big paint in blue, and a little white interfere, so that there are white stains on the blue mastic ... i.e. mix but heterogeneous. Roll out and cover the cake.
We put the cake in advance in the tray from the box, and in the same place we cover it with mastic, so that there are folds on the sides (see photo) ...

On white chocolate or white we glue all the figures and seaweed on the sides of the cake. Wave sticking to chocolate around small waves. Aysing diluted with hot water, beat with a mixer (take the exact amount of water, more thump it does not freeze!). Aysing is placed in a pastry bag and we draw along the edges of the waves ... wavy lines imitating the crests of the waves, then take a hard wet brush and blend.
